An Anglesey gimlet

Serves 1

  • 25g caster sugar
  • 3 limes, juiced
  • 1 shot of Jin Môr
  • Ice



This classic 19th century cocktail offers a sharp citrus hit, with the slight hint of saltiness from the Jin Môr coming to the party. Add a few drops of bitters and this is known as a Bennett.

Like most cocktails, best drunk ice cold with warm company. 

Put the sugar and 25ml of water in a small saucepan and place on a medium heat until the water dissolves. Remove from the heat and allow to cool.

Put 25g of the cooled simple syrup, the lime juice, gin and a large cube of ice into a cocktail shaker and shake well. Strain into a chilled glass.
