Have you ever wondered how we make our perfect Pure Sea Salt flakes? Photographer Tom Eagar has.

He brought his camera behind the scenes here at Halen Môn and caught our salt harvesters working their sea salt magic.

Here, on the beautiful isle of Anglesey, we’re producing Pure Sea Salt in much the same way it’s been harvested for centuries, with the help of a bit of modern technology too.

Before it even gets to us, the sea water goes through a mussel bank and a sand bank. Our pipeline draws this water directly from the Menai Strait into our Saltcote. 

 

Once in our plant,  we make a concentrated brine, by boiling it under a  vacuum for efficiency.

This incredible brine then flows into our crystallisers, it’s heated up again, and our skilled harvesters capture our famous flakes every morning, by hand. 

They rinse the flakes until they gleam, and pack them carefully for you before they are sent all over the world.

We’re still blown away by the size and the beauty of the crystals we harvest and how they really do seem to shine like diamonds. We quite often find large crystals like this, diamonds of the sea. We hand pick these out and put them to one side for lucky chefs.
