Salted Cherry Sour

Pure Sea Salt
The cherry on top of your Summer. Muddling the fruit with salt and syrup extracts lots of juicy tartness from the cherries, whilst amplifying their flavour. You could try making this with other soft fruit like strawberries, plums or raspberries and perhaps experimenting with a pinch of our vanilla sea salt instead of Pure Sea Salt.
Ingredients
- 6 cherries, pitted
- Pinch of Halen Môn Pure Sea Salt
- 40ml freshly squeezed lemon juice (juice of about ½ a large lemon)
- 20ml simple syrup or agave
- 80ml Jin Môr
- Ice, for shaking
- Cherries, or mint, to garnish
Method
- Tip the cherries into a cocktail shaker with the salt, lemon juice and simple syrup.
- Muddle together to extract as much juice from the cherries as possible.
- Fill the shaker with ice and pour over the Jin Môr. Secure a lid on top and shake vigorously for a minute.
- Strain into short, chilled cocktail glasses and garnish with a cherry, or sprig of mint.
