Manufacturing
Distinctive ingredients for food manufacturing
From pure sea salt and oak-smoked sea salt to controllable smoke flavour, Halen Môn ingredients help manufacturers add seasoning, texture, provenance and depth to food and drink products.
Our sea salts can be used for premium seasoning, visible texture, surface coatings and finishing applications. Halen Môn Oak Smoked Sea Salt combines seasoning with an immediate oak-smoke character, making it particularly suited to dry blends, rubs, coatings, bakery products and savoury snacks.
For manufacturers who need to control smoke independently from salt, Halen Môn Smoked Water offers a flexible, clean label alternative.

- Adding richness and subtle smoke without increasing salt content or smoking the meat
- Result
- Vastly improved flavour profile and uplift in sales
I'm hooked on using smoked water in my cooking; it makes it so simple to build more layers of flavour into whatever I'm making. The thing about smoked water is the smoke flavour is beautifully balanced and just the right sort of smoky, meaning you can perfectly control how you use it.

Smoked Water — frequently asked questions
Why use Smoked Water rather than smoking in-house?
It gives you a repeatable oak-smoke character without the capital cost, floor space, labour and batch-to-batch variability of running a smoking stage.
- A clean-label, natural ingredient
- Consistency of flavour across batches
- Adds savoury depth to plant-based and reduced-salt recipes
- Dosed to taste, from a background note to a distinctly smoky flavour
- Calorie free
What is the difference between Smoked Water and liquid smoke?
Halen Môn Smoked Water contains two things: water and oak smoke. Nothing else — no added salt, sugar, colours or flavourings.
Products sold as liquid smoke vary considerably in composition, and many include additional ingredients such as sugars, colours and flavourings. If you are comparing the two, we would always suggest working from the technical specification rather than the category name.
What certifications and accreditations do you hold?
Our Anglesey site is BRCGS certified at grade AA. Halen Môn Smoked Water is kosher certified, and we can supply certification and batch documentation on request.
Do you test for PAHs?
Yes. We carry out regular food-safety testing on Smoked Water, including for polycyclic aromatic hydrocarbons (PAHs). Results are available to customers on request.
Can you supply commercial volumes?
Yes. We supply ready-meal manufacturers, ingredients houses and plant-based producers in the UK and internationally. Our best-selling trade format is 10 litres, and we also supply retail formats.
Email sales@halenmon.com or use the enquiry form below and we will talk through your requirements.
How much Smoked Water should we use?
Inclusion levels depend on the application, the processing method and how prominent you want the smoke to be, so we always recommend a bench trial. As a rough guide for kitchen-scale work:
- Mashed potato, per 500g potatoes: 5ml for a savoury note, 10ml for a smoky flavour, 15ml for a pronounced smoke.
- Black beans, per 400g: 10ml savoury, 15ml smoky, 20ml pronounced.
- Bloody Mary mix, per 600ml: 5ml savoury, 15ml smoky, 20ml pronounced.
For commercial trials, request an application guide below and we will suggest a starting dosage for your product.
