Our story

Ein stori

Two students, one island and a saucepan of seawater. How a family from Anglesey ended up making the salt the world’s chefs reach for.

I.

From oysters to an aquarium

After graduating from Bangor University, where we had fallen in love with each other and with Anglesey, we looked for ways to keep living and working on the island.

Growing oysters to top up our student grants turned into a wholesale fish and game business, which we ran for 12 years. People were as fascinated by the fish in the sea as the fish on their plate, so in 1983 we set up the Anglesey Sea Zoo. It became the largest aquarium in Wales.

Both businesses were seasonal, so we sat down to work out what we could sell in winter. We came up with, and threw out, solid sandcastles and bottles of coloured sand. Then we landed on sea salt.

II.

The King’s coastline

We were already paying the King for the seawater. The Crown owns the coastline and charges rent for our pipeline to it.

We also knew the water around the island was exceptionally clean, because the seahorses at the Sea Zoo bred happily in it. Seahorses are very fussy about the water they live and breed in, so we had a feeling it could make the world’s finest flake sea salt.

As the crystals started to form, we knew we’d struck culinary gold.

III.

Welsh gold

In 1997 we left a saucepan of seawater on the Aga in our kitchen. Our first customer was Swains, the butcher in Menai Bridge.

Today Halen Môn is used by chefs and food lovers around the world. It was served at the London 2012 Olympics, at political summits and at royal weddings, and it goes into Green & Black’s chocolate and Piper’s Crisps.

You’ll find it in more than 22 countries, in over 100 of the UK’s best delis, and at Marks & Spencer, Waitrose and Harvey Nichols. And you can still buy it at Swains in Menai Bridge.
