Five perfectly seasoned recipes for the barbecue when the weather is being kind. All made to be enjoyed outside, with a smoky depth from the coals and a good pinch of Halen Môn.

SIMPLE 'PAWB' MARINATED SKEWERS

Pawb seasoning makes for a great marinade for the barbecue though these summery skewers would work well under the grill or in a griddle pan too. Make them with halloumi or chicken or simply with more vegetables. These skewers are made to be flexible, use what ever vegetables you have and are in season. They need a little time to marinate and refrigerate before you cook them so make sure to factor that in. 

 

BBQ MACKEREL WITH QUICK PICKLED CUCUMBERS AND CHARRED LEMON SALAD

A whole mackerel barbecues very well though we've gone for fillets here. The fish cooks beautifully on a barbecue and is elevated by quick pickled cucumbers and a charred lemon salad, making the most of the smoky hum of the barbecue. 

CHARRED PINEAPPLE WITH OAK SMOKED SUGAR + DARK RUM

Pineapple is one of our absolute favourites on the BBQ – it instantly makes you feel like you’re on holiday. See also: peaches with scorch marks, drizzled with honey. If you don’t have access to a BBQ at the moment, no fear, as the pineapple will work nicely in a hot griddle pan too. The combination of Oak Smoked Sugar and Dark Rum take this fruit to another level of deliciousness.

SMOKY SCALLOPS IN THE SHELL WITH TARRAGON AND BASIL BUTTER

This recipe actually works better on the barbecue if you buy the scallops and shells separately, as you’ll need to turn the scallops over halfway through cooking. The sweetness of these herbs really amplifies the flavour of the fish, but feel free to experiment with whatever you have in pots or in the fridge, although fresh green herbs will naturally work better with the delicate flavour of scallops than, say hearty rosemary or thyme.

PAPRIKA AND LIME BUTTER CORN ON THE COB

We love the sweet smokyness that a moment on the BBQ brings to an ear of corn. When British sweetcorn is available during its short season over the summer, this sharp and spicy flavoured butter is the perfect accompaniment.
