5 ways with Oak Smoked Water
A secret-ingredient that does a lot of heavy lifting with only a few drops, our Oak Smoked Water is made by slowly smoking water over oak at our purpose built smokery on Ynys Môn. It adds a gentle, savoury smokiness to everything from cocktails to marinades. It’s such a versatile ingredient that lends a clean, savoury smokiness to drinks, dinner, dips and plenty more besides.
A few drops go a long way. Stir it through your favourite dishes for an instant layer of smoky flavour without overpowering the other ingredients. Here are a few ideas to get you started if you’ve never cooked with it before:
Smoked whisky or rum cocktails
Add a few drops of Smoked Water to ice cubes before adding your whisky or rum-based cocktail. As the ice melts, it gently releases a subtle smoky note, adding warmth and depth to classic dark-spirited serves, like Manhattans, Sours and Old Fashioneds. A drop added to young whiskies can completely transform their flavour too, suggesting longer maturation in the barrel.
Depth-boosting marinades
Stir Smoked Water through marinades for meat, vegetables or fish before cooking. A few drops help build a deeper savoury flavour, working in tandem with ingredients like garlic, herbs, citrus and spices. Try it with roasted aubergine, grilled salmon, chicken thighs or barbecue-style marinades for extra richness.
Richer sauces and soups
A splash of Smoked Water can transform everyday sauces and soups, adding the kind of slow-cooked depth you’d normally get from hours of cooking and complex ingredient layering. We particularly love stirring it through a simple tomato sauce for home-made pizza— it gives the sauce a deliciously savoury, wood-fired character that makes every slice taste like was cooked on a back street in Naples. It also adds complexity to stews, soups and other savoury sauces. The more you add, the more the smoke flavour will come through, but a few drops can bring a subtle depth.

Best–ever homemade dips
Mix Smoked Water through dips like hummus or muhammara to add a gentle smoky note and extra depth. It works especially well with roasted peppers, tahini, chickpeas and spices, bringing out the savoury flavours and making simple dips feel more special.
Smoky mayonnaise
Stir a few drops into mayonnaise for an instant upgrade. Spread it into a sandwich with grilled vegetables, cheese or fish, or serve alongside crunchy chips for dipping.
