It’s been lovely and warm here on the salty isle in recent weeks, and a cocktail we first enjoyed across the pond with some friends in the US seems to be doing rather a good job of quenching our thirst.

Here’s our version of the Pink Grapefruit Margarita:

Per cocktail:

25ml Cointreau

25ml Tequila Bianco

25ml – 50ml fresh pink grapefruit juice

Fresh lime

Pink grapefruit peel to garnish

Halen Môn in a finer flake

Firstly rub a lime wedge over the edge of each glass, trying to make sure you get an even spread. Sprinkle the salt onto a small plate and rim each glass in the flakes.

Put all of the liquids into a shaker with plenty of ice. Shake and pour over more ice into each glass. (If you don’t have a shaker you can mix in a jug)

Finish with a pink grapefruit or lime garnish. We dare you not to drink more than one.
