Frozen blood orange Margarita
INGREDIENTS
Makes 4 large glasses
For the cocktail
- 400ml/14fl oz blood orange juice, frozen
- 120ml/4 fl oz good-quality tequila
- 85ml/3fl oz triple sec
- 60ml/2¼fl oz fresh lime juice
- A few drops of vanilla extract Ice cubes
For the glasses
- Finer flaked sea salt
- Brown sugar (smoked for the next level)
- ½ lime
An absolutely excellent cocktail to create some magic even on those darkest of winter days – deliciously balanced and a very pleasing colour.
The key to a good cocktail, as is the key to much good food, is to keep tasting and adjusting.
METHOD
- Pour all the ingredients for the cocktail into a large bowl with a spout or a jug, then whizz it in a blender in two batches.
- To serve, sprinkle the salt and sugar onto a small, flat plate. Rub the edge of each glass with the lime, then dip the rim into the salty sugar mix to coat. Pour the cocktail into the glasses and serve immediately.
